Exploring Roots of Peruvian Cuisine

La Mar joins forces with China Live for the launch of the guest chef collaboration series, Exploring Roots of Peruvian Cuisine on Wednesday, April 18 at La Mar. The collaboration series focuses on the cultural roots that influence Peruvian cuisine: Chinese, Italian, Japanese, and African. The series kicks off with Executive Chef Victoriano Lopez of La Mar and Chef de Cuisine Daniel Sudar of China Live. Peru is home to a diverse population with a rich history of cross cultural influence. The migration of Chinese immigrants in the mid-nineteenth century gave way to Peruvian culture and cuisine as we know it. Chinese food in Peru has evolved into its own culinary staple known as, “Chifa.” The six-course tasting menu ($129 per person) offers specialty dishes from each chef highlighting the influence of China onto Peruvian cuisine that is “Chifa.” Optional cocktail and wine pairings are available for an additional $39 per person. Guests are welcomed to a cocktail reception at 6:30 p.m. followed by a seated dinner at 7:30 p.m. Additional dinners to be announced will serve as a culinary passport throughout the regions that influence Peruvian cuisine: Africa, Italy, and Japan.
