Grilled Apricot Crostini

Crispy crostini are topped with decadent soft cheese, sweet grilled apricots, fresh basil, and a drizzle of honey. Shop for the ingredients Sundays at the Walnut Creek Farmers Market.

(Makes 12)
½ baguette or other crusty bread, thinly sliced
Extra virgin olive oil
4 - 6 oz. soft cheese of choice (e.g. fromage blanc, ricotta, goat cheese, burrata)
6 small apricots, halved and pitted (substitute with peaches or nectarines)
Small handful of basil leaves, sliced into ribbons
Local honey

Heat grill pan over medium-high heat. Drizzle bread slices with olive oil and grill 1-2 minutes per side, until lightly toasted. Remove from grill. Brush apricot halves with oil and grill 1-2 minutes per side, until lightly charred. Assemble crostini: spread on a spoonful of cheese, top with apricot, drizzle with honey, season lightly with salt and pepper, and garnish with fresh basil ribbons.
