Fourth of July Blueberry Recipes

Plump, juicy, blueberries are one of nature’s great treasures. Packed with antioxidants, local farmers markets are brimming with berries for snacks, salsas, salads, and smoothies.

BLUEBERRY BARS | Walnut Creek Farmers Market  

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups quick cooking oats
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
3/4 cup cold butter
2 cups blueberries
1/4 cup sugar
2 tablespoons cornstarch
2 tablespoons fresh lemon juice
 
Directions:

Preheat oven to 375 degrees. In a large bowl, mix together flour, oats, 1/2 cup sugar, cinnamon, & baking soda. Cut butter into the mixture to form crumbs. Set aside 1 1/2 cups and press remaining into a parchment lined 9 “dish to form crust. Bring blueberries, 1/4 cup sugar, cornstarch, & fresh lemon juice to a boil in a saucepan until thick, about 3 minutes. (Stir constantly to avoid burning jam.) Spread blueberry jam over crust. Top with reserved crumbs. Bake 25 minutes, or until just browned. Cool in pan, then remove parchment to a board. Cut into bars. 


 

SWEET & SPICY BLUEBERRY SALSA | Pacific Coast Farmers Market

Ingredients:
3 cups blueberries – chopped
1 cup fresh apricots or strawberries – chopped
1 can black beans, drained
1/4 cup lime juice
1/2 cup red onion – chopped
3 tbsp fresh cilantro – chopped
1/3 cup diced red pepper
2 minced seeded jalapeño peppers
1 tablespoon sugar
½ teaspoon salt
Ground pepper, to taste

Directions: Mix together ingredients and refrigerator for at least an hour. Serve with tortilla chips, grilled chicken or your favorite fish.

CREAMY STRAWBERRIES WITH THE BLUES | Diablo Valley Farmers Market

Ingredients:
1 pound of strawberries
1 pint blueberries
8 oz. whipped cream cheese or crème fraîche, softened
1 teaspoon Mexican vanilla
3 tablespoons local honey

Directions: Wash strawberries and blueberries. Let dry. Mix softened cheese with vanilla and honey. Core strawberries with melon baller. Pipe or spoon the cheese mix into strawberry. Top with a blueberry. Yum!
